Restaurant expansion continues to be one of the strongest categories in the Minnesota metro. From QSR to full-service, there is still a plethora of restaurants popping up everywhere.
Chipotle has started looking at sites outside the Highway 494/694 ring and in more out-state markets. They expect to open 12 stores in the next 12 months. Qdoba is rumored to also be in expansion mode after a quiet spell.
Two downtown skyway restaurants are looking to add to their store count: Sprout Salad Co, offering signature salads and lavish wraps, along with Greenfield Natural Kitchen, which offers healthy bowls and wraps.
Coffee is not immune to the continued surge in activity. Starbucks, Caribou and newly announced Scooter’s Coffee are all actively seeking new sites. Additionally, Dunkin Donuts is making progress in securing metro-area franchisees.
Café Zupas and Nothing Bundt Cakes are two new concepts in the metro. Zupas is planning to open its first location at City Place in Woodbury in October and Nothing Bundt Cakes is now open in Eden Prairie and Blaine with more stores to be announced.
BurgerFi, one of the few active burger concepts, has its sites on Minnesota. Meanwhile Smash Burger continues to seek new sites, having opened in Chanhassen, Knollwood Mall and Hudson, Wisconsin in the 4th quarter 2014.
Another less active category in Minnesota is the quick-serve personal pizza concept. One to two stores were opened, but have gone to an almost complete standstill since.
