MINNEAPOLIS (September 2, 2014) – Merchant, the first restaurant by acclaimed Chef Gavin Kaysen, has signed a 6,400-square-foot lease at 211 North 1st Street in Minneapolis. Mid-America Retail Leasing Specialist Carrie Charleston represented Merchant in the transaction.
“Working with Carrie was an incredible experience and opportunity. Since I am new to owning my own business, she helped me through the process while navigating the negations in my favor,” says Kaysen. Kaysen, raised in Bloomington, Minn., is the former executive chef at Café Boulud.
There will be five sections on the Merchant menu: Garden, Composed, Grains & Pasta, Sea, and Land. The Garden and Composed sections will serve as appetizers, while the Grains & Pasta section can be both an appetizer or entrée size.
At Merchant, excellent service and food will be defined as giving unwavering attention to detail while maintaining a neighborhood, casual restaurant feel. The experience will emphasize Kaysen’s willingness to have fun and break the rules. The Merchant team will constantly seek out ways to make the experience remarkable and tailored to the individual guests.
“In my initial discussions with Gavin, we quickly determined he needed to be in the North Loop neighborhood. With its unique, urban character, it has become known for some of the best independent chef-driven restaurants in Minneapolis. In previewing the location, I immediately felt the bones and character of the space were a perfect match for Gavin’s vision for his restaurant,” says Charleston.
The restaurant, named one of the Most Anticipated Restaurant Openings by Eater National and Tasting Table National, is expected to open in November 2014.
